INGREDIENTS

for seven people:

For the cracker basket:

  • 250 g flour 00

  • 138 g water room temperature

  • 5 g yeast

  • 13 g extravergine olive oil

  • 6 g salt


For internal basket:

  • 300 g semolina pasta (orecchiette, penne …)

  • 280 g potato

  • 350 g diced smoked Pancetta Furlotti & C.

  • 400 g chicken breast

  • 300 g apples

  • 140 g fresh Parmigiano Reggiano

  • 50 g sugar

  • oil as much as you like.


For the vinaigrette:

oil, wine vinegar, honey and salt as much as you like

PREPARATION

  • Prepare the baskets. Mix flour and water, add oil and yeast; at the end the salt. Let the dough rise for an hour. Roll out the dough and create thin sheets. Pierce them with a fork and cover round molds (to create the shape of the basket) previously greased with oil. Cook in the oven at 180 ° C for 15/20min.
  • Dice the potatoes and then cook them in water, cool them and then sauté in a pan with oil and salt.
  • Peel the apples and cut them into cubes and toss in the pan with the sugar, slightly caramelize.
  • Sauté the diced smoked Pancetta. Meanwhile dice fresh Parmigiano Reggiano to be added after the other ingredients to add flavor.
  • Put it in a perforated tray each sautéed ingredient to remove the liquid. Bake the dough, cool it to room temperature. Combine all ingredients, taking apart a little Pancetta and apples.
  • Dial the baskets with all the ingredients and decorate with the remaining bacon and apples, decorating with sheets of crackers to taste. Season with apple vinaigrette.
